As soon as I saw this recipe, I knew I had to make it. It combines several of my favorite ingredients together and the flavor is out of this world. The star of this dish is the avocado miso dressing. It’s creamy, tasty and simply amazing.
The recipe calls for dinosaur kale, but I used curly kale since I haven’t been able to find the dino variety. I also added shitake mushrooms to make this dish a bit more filling. As this noodle bowl is best served cold, it is perfect for these hot summer nights when you’re craving for some healthy carbs.
