You know when you’re trying to be super healthy but all you want is a little crunch. You’re avoiding anything fried (chips), gluten (crackers), and all things with major unpronounceable components (cheetos); so what do you reach for when kale just ain’t cutting it’? Rice cakes! Rice cakes? Yes, rice cakes, but not just your average run of the mill rice cakes, no, we’re talking brown rice-gluten-free-avocado-topped-make-you-feel-like-you’re-not-missing-out-on-brunch, rice cakes!
Yup, we’ve topped our favourite brand of rice cakes with just about every ‘healthy topping’ and have come up with five healthy alternatives to the average ‘toasts’ that we’ve seen trending on social just about every weekend.
Here are our faves:
PB&B with a little H:
Top your rice cake with a healthy spread of nut butter (peanut, almond, etc), slice up some fresh banana on top and drizzle with some honey and sprinkle with some cinnamon
You may be sick of salad by now, but sometimes all it takes is it to be served in a different form.
This rice cake is topped with a spread of hummus, a handful of arugula, some freshly chopped cherry tomatoes and a drizzle of balsamic glaze
Cuckes & Not-So-Cheese:
If you’re avoiding dairy like me, Tofutti has the most delicious dairy free ‘cream cheese’. I like to top my rice cake with some of the Tofutti spread and then slice some cucumber really thin, add freshly cracked pepper and a pinch of garlic salt, yum!
Avocado Toast Impersonator:
Mash some avocado with a little bit of fresh garlic, some salt, pepper, slather it on a rice cake and sprinkle on some red pepper flakes, etc voila! You’ll have an Instagram worthy snack in no time!
Lox of Life:
Tofuti appears again in this recipe with a good spread over the rice cake. Then layer on a few slices of smoked salmon and sprinkle with some dill.
