Have you ever seen a better gloomy day pick-me-up? This super easy twist on the original pancake is a fun treat for kids (and basically everyone else) that takes a few more seconds and will bring a smile to whomever you serve them to.
You can use your favorite fluffy pancake recipe but if you don’t have one, here’s my go to. Makes around 8-10 depending on the size.
1 1/2 cups of all purpose flour
3 1/2 teaspoons of baking powder
1 teaspoon of salt
1 tablespoon of white sugar
1 1/4 cup of milk
3 tablespoons of melted butter
food colouring of your choice
Sift all dry ingredients into a large bowl. Make a well in the center and pour in the milk, egg and butter. Mix well.
Separate pancake batter into small bowls, depending on how many colours you wish to make. I made 5 colours so I needed 5 bowls.
Add colouring to the bowls until you get your desired shade.
Spray or butter your pan/griddle and heat on medium-low. The pancakes can get brown quickly, so cooking them on a low setting helps. Add batter from your first colour and let cook until it begins to bubble around the edges and then flip and cook on the other side. Repeat this process until all of your pancakes are cooked.
Stack your rainbow pancakes and if you want to get crazy like me, add a dollop of fresh whipped cream!
Or get extra nutty and make it into a dessert by adding some multicoloured candies
