Party Food: BLT Poppers!

  Because it’s party season I’m always on the hunt for delicious and easy recipes for appetizers.  So when my sister was putting together a holiday party for her friends a few weeks back I thought it would be fun to help her make the appetizers and then share our creations with you.
BLT Poppers are the first of three that we collaborated on.  Super simple, outrageously delicious and easy to pack for a pot luck or work party.  Plus they’re one bite making it easy for guests to just pop in their mouths – hence the crafty name we came up with..
Ingredients:

2 packs of small tomatoes (one step up from grape tomatoes, usually on the vine in the plastic package at your grocer)
Half a pack of bacon (or 5 strips)
250g tub of plain cream cheese
3 cloves of garlic, minced
2 table spoons of olive oil
2 tablespoons of fresh chopped basil
1 tablespoon of chopped chives (we used dried)
Your choice of salad greens (we used spring mix), about 2 handfuls, chopped
Bread crumbs for texture
Salt and pepper to taste
Method:
Cut tomatoes in half and remove the insides. This is easily done with a grapefruit spoon or melon baller if you have one on hand. Set aside in the fridge.
In a frying pan on a medium high, put in the olive oil and minced garlic. Cook for a few minutes until golden brown. Adjust the temperature if it starts to burn. Set aside.Using the same pan used for the garlic, chuck in your bacon. Make sure it’s straight on the pan and not all crumple-y to assist in making it uniformly crispy. Turn over in 2-3 mins or until browned and do the same on the other side. Once bacon is to your liking (I like mine super crisp – plus, it’s a nice texture in the app), take out and place on paper towel so that the excess oil can drain out a bit. Once it’s sat and dried out for a few mins, chop up into small bits. (If you’re in a major time crunch you can skip the whole frying bit and just nuke the bacon)
In a medium bowl, empty the tub of cream cheese. Pour over the garlic and combine. Then add the bacon and mix evenly.

Once mixed, spoon out into the tomatoes. Top with bread crumbs and chopped greens. Set in the fridge for at least 20 mins, so they can firm up, and serve.

  1. this looks so delish and easily accomplished even for someone who suffers from a profound lack of culinary skills (like moi). Of course I’ll add more bacon ’cause know, it makes my world go round 🙂
