I don’t eat fish or seafood but I LOVE tuna salad… Go figure? I’m strange… So when searching for picnic sandwich alternatives I came across some recipes on Pinterest for a vegan version of tuna salad. A little weary at first – a chickpea sandwich? I told my mind to hush, gave it a whirl and bah-dah-dah-dah-dah! It was delicious. I even whipped it up one afternoon for the Mr and fed it to him without an explanation of what it was (especially leaving out the word VEGAN) and he asked for seconds. #win
You can serve it on whole grain bread, in wraps, on a salad or even wrapped in lettuce. It’s refreshing and satisfying and perfect to pack up for a picnic – especially because there’s no dairy to worry about. I’ve listed a few things as ‘optional’ because this is one of those recipes that’s great super simple but also lovely amped up by punchy flavors like dill pickle and smoked paprika, but it’s totally your call.
-1 can of chickpeas drained and rinsed
-1-2 green onions chopped
-1/4 cup of celery
-1/4 cup of carrot
-1 tbsp of dijon
-juice of half a lemon
-1/4 cup of hummus, tahini or vegan mayo (I prefer hummus with half a tablespoon of tahini, but totally your call)
-a couple dill pickles chopped (optional)
-dash of smoked paprika & garlic powder (optional)
-salt and pepper to taste
-mash the chickpeas
-add remaining ingredients and combine
-taste and adjust seasoning to your liking
I added some mashed avocado to this wrap and it was so delicious!
