How To Make: Avocado Egg Cups


High in those good omega 3’s and protein, low in sugar and packed with delish!  This simple baked egg remix is the perfect breakfast or brunch that’s also easy on the eyes and can be simply doubled or tripled for a crowd.

Here’s how:


serves two (or four if you all just want one egg)

-two ripe avocados

-4 eggs

-salt and pepper to taste


How To

-preheat oven to 350

-cut avocados in half, remove pits and scoop out about a tablespoon or two of the avocado to ensure there’s enough room to fit your egg

-place avocados on a baking sheet

-crack eggs into the avocados

-season with salt and pepper

-cook for around 15- 20 mins or until the yolk has reached your desired consistency.  I like mine pretty hard so I kept it in for a bit longer


These are also delicious with fresh herbs, salsa and even hot sauce if you’re into that.
