To me, there’s nothing like a potato. Basically any way it comes. Fried, baked, mashed, diced or hashed, I’m into it. But with trying to eat clean I’ve been avoiding these bundles of starchy goodness. Avoiding though, doesn’t mean that I don’t still crave them like a madwoman. Enter cauliflower. I’ve already demonstrated it’s wonders in soup, as a rice alternative and even pizza! But it wasn’t until I saw it on Instagram a few weeks ago that I had another ‘aha’ cauliflower moment – mashed cauliflower, an actually delicious alternative to your mashed potato best friend.
This one is super simple, just steam and smash. I like adding some fresh herbs like thyme and chives but you can also add things like almond milk (if you want to keep it vegan) or butter and milk if you’re cool with dairy.
1 medium cauliflower head
2-3 pieces of roasted garlic – I roasted my own in the oven (here’s how) but you can totally buy pre-made at the grocery store around the olive section
1 tsp of fresh chives chopped
1 tsp of fresh thyme chopped
salt and pepper to taste
Core your cauliflower and remove the florets
Bring around an inch and a half of water to a boil in a pot that fits a steamer insert and add insert once it’s boiling and place florets inside, cover and steam for around 10-15 minutes or until the cauliflower is fork tender
Place cooked cauliflower in your food processor along with garlic, herbs and salt and pepper and puree until smooth
Adjust seasoning to your tastes
