Cinco De Mayo: Cucumber Ginger Margaritas & Chicken Tacos

Do we ever really need an excuse to make tacos and margaritas? We think not.

However, if you do then we have some good news, it’s Cinco De Mayo on Saturday! In the spirit of the celebrations, we thought we’d recreate some simple recipes (and give them our own little twist) for you to enjoy at home. Although you cant say we didn’t warn you… these margaritas go down a little bit too easily!

What you’ll need:
Makes 3- 4 servings depending on the glass size
• 3 limes
• 4 ounces good quality tequila (we recommend Casamigos)
• 
2 ounces cointreau
• 1.5 ounces ginger simple syrup (we bought ours at our local grocery store, but you can make you own at home and save a dolla!)
• 2 ounces cucumber juices

For the rim, simply run half of a lime around the top of the glass. Pour salt on a small plate, turn the glass upside down and lightly twist a few times. For the cucumber juice, you’ll need to dice 2 whole cucumbers, add one cup of water and blend on high for about 30 seconds. We recommend straining the juice blend for the best consistency! Now, for the good part – the cocktail! Mix the tequila, cointreau, ginger syrup, cucumber juice and the juice of 2 limes into a cocktail shaker, add ice and shake well! For garnish, a thinly sliced cucumber peel is all you need! Drink Up, Cowes!

For our tacos, we made a few additions to a simple recipe. You can use whatever meat preferences you have, or even easily make it veg-friendly! 

Here’s what you need:

  • 2 thinly sliced chicken breasts
  • 2 Tbsp Sriracha
  • 6 corn tortillas
  • 1 cup chopped red cabbage
  • 1/2 cup chopped peppers
  • 1/4 cup feta cheese
  • 1 lime
  • 1 avocado

We purchased freshly made tortillas at our local bakery, but here is a recipe for you to really hone in on your culinary skills and make your own!

Once the chicken is cooked, shred it and mix with sriracha. After all of the toppings are prepared, build your tacos to your preference, squeeze a quarter of a lime per taco and enjoy!
