Creamy Mushroom Soup Without The Cream

Literally as soon as the temp drops all I want is soup. From hearty stews to simple sipping bone broth, soup is all I crave and pretty much all I’ve been making for the past few weeks. Jimmy recently brought home a yummy mushroom soup without cream that was still creamy and I was inspired to re-make it. I tried two different ways and came up with this recipe that is pretty damn delicious. I even brought some to the office to have my girls give it the ultimate taste test (we have some picky tastebuds) and I’m happy to report that they dug it!

The first time I tried this recipe with just cremini mushrooms but found when I used a few varieties that the flavour was way more robust. For this version I used cremini, portobello and shiitake.


Creamy Mushroom Soup Without The Cream


  • 1 tbsp of butter (or vegan alternative)
  • 1 tbsp of good olive oil (you can use two tbsp here if you want to avoid the above tbsp of butter)
  • 1 cup of chopped onion
  • 1 tsp of salt
  • 6 cloves of garlic chopped
  • 2 bay leaves
  • 1/2 – 1 tsp of crushed chilli peppers
  • at least 6 sprigs of fresh thyme
  • 6 cups of chopped mushrooms
  • 1 potato cubed, skin removed
  • 1 can of full fat coconut milk
  • 3.5 cups of broth (veg, chicken or bone)
  • salt and pepper to taste
  • spicy oil to top (I LOVE Pinch)


How to:

  1. in a large pot or dutch oven sauté onion in olive oil and butter until translucent
  2. while the onion cooks chop the mushrooms and remove thyme from stem
  3. add the mushrooms and thyme to the onion tsp of salt and the chilli peppers and let cook on low until the mushrooms start to release their juices
  4. add coconut milk, potato, bay leaves and broth to the pot and bring to a boil
  5. once at a boil bring down to a simmer and let cook for around 20 – 30 mins
  6. either in batches or all together, blend the soup so it’s a creamy consistency
  7. pour it back in the pot and it’s ready to serve
  8. once it’s in a bowl (or bowls) I like to top my soup with some nice spicy oil for a finishing touch
  9. enjoy with friends or curled up on the couch with a good show or book!
